mexican kitchen is back

As I told several times before, I'm a huge huge huge lover of mexican food. If I had to choose one fav country when it's about food, I couldn't choose between China and Mexico.
And as I also told you, I miss a lot Santa Fe. I miss a lot of things, but one of the things that I miss most, is the food.
That mix between american and mexican food is unique! And I really really miss some days on the cafeteria of the university when the menud was baked cheese with pasta or tamales.
So today, we're going with tamales!!! A really delicious mexican dash, spicy, of course, but REALLY yummy!!

Actually, there are a lot of different kinds of tamales: pork, chicken... but my favorite is the green chile and cheese tamales!
Actually, I think this is a more difficult recipe than others that I posted on the blog, so I tried to find the most simple recipe on the Internet, and I found this one on this blog

INGREDIENTS:

2 cups instant masa
2-3 cobs of corn (or 1 can)
2 cups water
2 vegetable bullion cubes
1 cup vegetable shortening (optional)
1 cup diced roasted green chilis
20-25 large corn husk wrappers
1 1/2 cup crumbled queso fresco (farmers's cheese)
1 cup chopped cilantro

{via}

DIRECTIONS:
  • soak corn husks in water
  • steam corn on the cob for 20-30 min
  • warm water to dissolve bullion cubes (or use 2 cups veggie broth)
  • mix together masa, broth, corn and shortening so that the consistency is thick like mashed potatoes
  • take 3-4 husks and rip into long strips that are about 1/4 in.
  • place about 3-4 Tbsp masa into the center of the corn husk
  • top with desired amount of green chilies, cheese, and cilantro (avoid overstuffing)
  • fold over the two lateral sides of the husk
  • fold over the top and then the bottom flap
  • make sure the bottom overlaps the top
  • tie husk string so that it is taught but not too tight
  • repeat until ingredients are gone
  • place in steamer for 45 min to 1 hr (or until tamales puffed up)
  • serve hot with red and/or green sauce

Viva Mexico's independence!

The best part about living in a different country and know people from different parts of the world, is that you can celebrate parties that you never imagined you went to! And this Saturday, that happened: it was the Mexico's independence day, and I have known people from Mexico these days here in Santa Fe, and they're really my friends, so.. let's celebrate!!

Of course, Tequila was one of the guests!! The party was amazing, imagine: mexican, american and spanish people celebrating that, hundreds years before, Mexico got the independence from Spain. CRAZY!

ps: my red sweater is from American Eagle. I've been shopping these days, so I guess in my next post I'll show you all my new stuff, because I hadn't time yet to take pictures of everything!

Mexican Inspiration: Aztec Trends!

Lately, aztec is a trend! The point is that there are not much people who dare to wear this kind of clothes, truth is that a lot of people is scary about wear lots of colors.
In my case, love this trend, and not just for your closet, also for home! So, today, with this post we're going to see how to use aztec inspiration whatever: home, rooms, closet... life at least! Let's start with some accessories & ornaments for home and room!

Love this pillow!

This aztec vase handpainted ir pure art!!

Some aztec touches for the kitchen, like this butter dish.
This blanket can turn any coach in a total aztec coach, better if the coach is brown!

In my opinion, when it's about decorating, aztec must be used in touches, I mean, not an aztec coach, or a bedding aztec. Instead that, use touches like the pillow or the blanket, but not both ;)

And now, it's our closet turn!! Have so many things that I think we'll ned second and thir part for this post!!

Cropped tops are must have!! What about an aztec style?? This one is from Topshop.
If u want much more color, this one is from Jane Norman
Need this one from House of Fraser right now!!
This is a very elegant skirt from Browns
Cold outside? Grab this Desire of clothing jumper.
Can't live without these aztec leggings from Topshop.
What about this cute John Lewis dress?? It's perfect for a casual day or for a cocktail, whatever!

But maybe ou prefer aztec accessories better than clothes! Don't worry, look behind!! Woww

All of u know how much I love rings!!! And I can't choose any aztec ring, need all of them!!. This one, for example, is from Miss Selfridge.
Also from Miss Selfridge.

Totally in love!! House of Harlow is a very aztec brand. Maybe in a few days, I'll do a post about HoH, really love it!

Amazing Delias necklace. Love feathers when it's about aztec style!

Asos bag. So cute!

This Cynthia Vincent Cavas is perfect for a picnic!

From Akira Store

Cute Asos Boots (L)

Hope u have enjoyed this aztec inspiration!! And never forget a dream catcher!! So aztec, and I really really love them!!

What do U call a cheese that's not yours??

Nacho Cheese!!
It's Sunday!!! Relax day!
How were your plans yesterday?? Mine, UN SUR PA SSA BLE! Sadly, I could not see Trespass, because I don't have it yet, when I get it, I'll tell you. Instead, I saw this one:

It's magic!! I think the whole family could enjoy it on Thanksgiving, for example! Ideas and ideas for kids to ask yo Santa Claus! (Papa Noel to me!!)

Going back to the picture, what do you think about Nachos for this Sunday?? A veeery good idea! I'm not mexican, so I'm not an expert on mexican food, and neither preparing it, but I have my own tricks to make my mexican dishes not perfect, but delicious at least!
Before continue, I'd like to say THANKS to all that people who like me! And, to demonstrate it to me, they like my facebook page THANK U SO MUCH!!
Ok, continue with nachos!! Today, U can feel veeeeery lucky, cause I'm going to share with U my trick!! ATTENTION, because I'm not going to repeat it (althought you will be able to re-read it over and over again!! hahaha)
Things you need:
A Tortilla Chips bag (if you don't know make them by your own, like in my case)
A tomato sauce can (Solis is my fav, but you can use whatever you like!)
CHEESE!!! Of course!!! There are so many kinds of cheese!! My fav is Gouda, but use your fav!
Ground beef
Guaca guaca, mole mole!
Ok, if we have all the ingredients, we're ready!!

The way I make my dish is very easy:

1- Brown the meat. When it's ready, you won't really need cook anything else.
2. In a big dish, put tomate sauce, not much, but enough.
3. Now put a cheese slice, and now put tortilla chips, so mmuch as the hungry you feel!
4. Now, the beef on the chips, and cheese.
5- Microwave on until the cheese melts.

6: VOI-LÁ!! You just need your guacamole and sour cream.. DELICIOUS!!

It's one of my fav dishes for any time on the day, or if you have friends, because it looks like: woww how much time were you cooking?? The secret answer is: emm... 5-10 minutes maybe??
And kids really really apreciate it!

After this, on the evening, I have to see a match!!! And on weekends, I'm sure most of you do it! What's your fav sport?? I don't have doubts: SOCCER! And at 8 pm, Celta de Vigo (the team of my hometown) has a game against our rival! It's a derby!!
So, for matches, what could be a perfect outfit?? I don't mean to go to see it live, but on TV, like it's, sadly, my case today! What I'm thinking about wear today is this outfit:

serg

Hope you finish this week happy and you start the next better!!
